Wait, hold on. So, if you just need to grind the weapons that initially came via the game to get Damascus, than just how does Platinum work? Does it follow the very same rule?

Yep. Once you grind the over in each category to gold, you'll get platinum for that category.
Edit: Should clarify - You'll just acquire platinum for those tools you already have gold on, however that counts for Damascus. If you desire the added DLC tools to be platinum, you'll need to grind each of those to gold. Either method, they don't count in the direction of Damascus.
